A Lighter but Equally Delicious Version of the Kansas City BBQ

On my trip to Kansas City last week, I was told numerous times that I HAD to try to Kansas City BBQ. Being the adventurous foodie I am, there was no hesitation to take up the challenge. I went to the famous Jack Stack BBQ and opted for lamb ribs with a side of corn on the cobb. The ribs were out of this world. My mouth is still watering right now just thinking about it. I don’t even want to know how much calories and fat were consumed in this BBQ meal, but my guess is that it was pretty high!

After returning to LA I decided that I would recreate my Kansas City BBQ meal, however with a guilt free twist to it.

 

8 t-bone type lamb chops
1/4 cup olive oil
3 garlic cloves, crushed
2 tablespoons fresh lemon juice
1 pinch oregano
salt and pepper

Marinade Lamb Chops in remaining ingredients for an hour or two.

Barbecue on medium high BBQ grill till done to your preference- (3 minutes per side for medium).
