Satisfy Your Cookie Craving: Vegan Apricot & Almond Tea Cookies

Within the last couple of weeks I’ve had a weird craving for cookies. Just call me the cookie monster. They truly are one of my guilty pleasures.

Every week I host a girls potluck dinner at my home. One of my best friends is a major cookie monster as well, but she is vegan so it’s harder for her to fill her obsession. Last week I surprised her with some vegan apricot and almond tea cookies. These cookies have no sugar in them and are filled with healthy whole wheat flour. The best part is that they only take 5 minutes to prepare and 10 minutes to bake. YUM!

I decided to make them extra tasty with a greek yogurt topping :)

2 Cups Whole Wheat Flour
3/4 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
1 1/4 Cups Rolled Oats
1/2 Cup Stevia
1 Cup Chopped Almonds
1 Cup Chopped Apricots
1/2 Cup Oil
1/4 Cup Soy Milk
1 Tbsp Vanilla Extract

Preheat over to 350. In a large bowl, sift together flour, baking powder, baking soda, and salt. Add the oat flakes, stevia, almonds, apricots, oil, milk, and vanilla. Scoop spoon-sized portions onto a lightly oiled cookie sheet and bake for 10 minutes.
